How to Choose a Commercial Reach-In Refrigerator

A reach-in refrigerator works harder than almost anything else in a commercial kitchen. It gets opened hundreds of times a day, loaded with warm product, and parked next to cooking equipment that radiates heat. Choosing the right unit comes down to a handful of practical decisions.

Start with capacity, not footprint

Count what you actually store on your busiest day, then add room to grow. A single-door unit (around 23 cubic feet) suits a small line or a prep station. Two-door units roughly double that and fit most full-service kitchens. If you are regularly staging sheet pans, check the interior clearances on the spec sheet rather than guessing from the outside dimensions.

Solid doors or glass?

Check the specs that affect daily service

  • Temperature range and recovery. The unit needs to hold food at 41°F or below (per the FDA Food Code) even with frequent door openings.
  • Condenser placement. Top-mounted condensers pull cleaner, cooler air and are easier to service; bottom-mounted units put storage at a comfortable height and cope better in hot kitchens.
  • Door hardware. Self-closing doors with stay-open stops, field-reversible hinges, and gaskets you can replace without tools all reduce lifetime cost.
  • Electrical requirements. Most reach-ins run on a standard 115V circuit, but always confirm the plug type and amperage against the spec sheet before installation day.

Think about the warranty before you need it

A refrigerator is a compressor with a box around it, so pay attention to how the compressor is covered.
